Chiang Mai - Day 2 - Cooking Class

After a long first night, we slept before getting up for a late breakfast. We then signed up for an afternoon cooking class and were picked up at the hotel at 3 PM.  We thought cool just us in the van, wrong, first ones in the van. It was packed with 12 people by the end.  For us, it was like a free tour around the city at night.  We were also the oldest members of our group.  Our instructor Lily was great. Nice group of young people from all over the globe,  NYC, California, India, Sri Lanka, Toronto, and one woman from France did a 4-hour live stream of our class on Twitch.
We had a wonderful, outgoing, and funny cooking instructor by the name of Lily. She often refers to herself in the 3rd person.
Hot Basil Chicken
Sherry's green curry

Prov's red curry

Prov's fried rice

Curry paste final products

Sherry wants a good long handled Wok and a heavy duty big mortar and pestle.  It takes a lot of work to pound the roots into the paste but so worth it.
